Apple compote with yogurt and almonds is a delightful and nutritious dish that combines the sweetness of stewed apples with the creamy texture of yogurt and the crunch of toasted almonds.
Ingredients
3 apples, peeled, cored and chopped
2 tsp ground cinnamon
150g organic soya, coconut or almond yoghurt
1 tbsp toasted almonds flakes
Add the apples to a saucepan along with the cinnamon and 50ml of water.
Place a lid over the pan and simmer on low heat, stirring occasionally, for about 10 minutes or until the apples have softened but maintain a slight texture.
Place 50g of yogurt into a bowl and layer with one-third of the cooked apples, then sprinkle with toasted almonds.
